Tokaji Aszu is one of the oldest and well know sweet wines. In 1700 Prince Rakoczi of Transylvania classified the best vineyards into 1st, 2nd or 3rd Growths. With Soviet pressure to increase yields to produce commercial wines for export, quality decreased but the renaissance of Tokaji began with The Royal Tokaji Wine Company in 1989, inspired by the renowned author, Hugh Johnson, among others. The Tokaji region is north east of Budapest, and lies around the town of Mád. The lakes around this area create a mist which aids the on set of noble rot. Sweetness is measured in Puttonyos with 6 being the sweetest. These wines will age.
