Production
Botrytis Cinerea or Noble Rot, is a fungal infection induced by humidity. Spores grow on the grapes, making the must concentrate in sugars, therefore raisoning the grape without the skin being broken. This allows for intensely sweet wines to be made suchas Sauternes, Tokaji, Auslese, Beerenauslese and Trockenbeerenauslese.
